Las Lajas is ran by a husband-and-wife team, Francisca and Oscar Chacon, from their farm in the Central Valley, sitting pretty at 1,300 to 1,600 meters. They've been a favorite with coffee buyers for years, and for good reason.
Francisca wanted to push the flavor game beyond the traditional washed method. She spent years experimenting, building her own processing gear, and even using a Brix meter to make sure only the sweetest cherries get through.
The duo are also hardcore organic. They use their own homemade compost, focus on soil health, and even grow shade trees to keep the whole ecosystem humming. It's this dedication that earned them organic certifications from Japan, the U.S., and the NOP.
