Up in the high-altitude zones of Peru – think Chachamayo, Amazonas, San Martin – small-scale farmers are pulling out some serious Arabica. Slow growth at these elevations means denser beans and a more complex flavor profile.
Enter the Aprocassi Cooperative, established back in 2000 with a mission beyond just coffee: protecting the local ecosystem. They're not just about tech support for farmers; they're invested in the community. Based in the San Ignacio region of Cajamarca, where the climate's a sweet 24°C, this area's a natural haven – wildlife included.
Expect a light floral and fruity aroma – that's the signature of this carefully sourced coffee.
Processing is clean and classic: washed, fermented 2-3 times (20-48 hours), and then patiently dried on raised beds to that perfect sub-12% moisture. This is well-handled, high-altitude Peruvian coffee with a strong cooperative ethos.
